Fumi brings Japanese dining at its finest to Brighton's food scene

Fumi restaurant is earning plaudits for authentic Japanese cuisine that stands out among Brighton's growing number of Japanese eateries.

Brighton & Hove Editorial14 June 2026

Brighton's Japanese restaurant scene has grown considerably in recent years, but one establishment is winning particular acclaim for its commitment to authentic cuisine. Fumi has become a favourite among those seeking Japanese dining that moves beyond the familiar sushi and grilled chicken fare found in many UK restaurants.

What sets Fumi apart

Whilst Brighton benefits from several respected Japanese venues – including Bincho Yakitori grill on Preston Street, Moshimo on Bartholomew Square, and Pompoko near the Dome – Fumi is earning recognition for bringing something different to the table. Rather than the heavily Anglicised menus that dominate, the restaurant offers dishes that reflect authentic Japanese culinary traditions.

Many Japanese restaurants in the UK have adapted their offerings to suit local tastes, typically serving the same rotation of salmon, tuna and sea bass sashimi alongside yakitori skewers. Fumi's approach differs markedly, drawing inspiration from the breadth of Japanese cuisine experienced across the country – from late-night convenience store snacks to Michelin-starred establishments.

The omakase experience

The restaurant's weekly Wednesday omakase supper showcases this philosophy perfectly. 'Omakase' – meaning 'respectfully leave another to decide what is best' – sees the head chef curate a bespoke menu based on the finest ingredients available that day.

Recent diners have been treated to carefully considered courses that demonstrate culinary skill and attention to detail. The experience begins with shared sake and elevated miso soup dressed with nori seaweed and wild garlic oil, followed by dishes such as seared wagyu beef wraps with teriyaki sauce, seasonal asparagus, daikon radish and cucumber, and seared salmon tataki – a lightly flamed raw dish that elevates a commonly served fish to new heights.

Plating receives equal consideration, with thoughtful presentation adding visual appeal alongside flavour. At £80 for six courses, the omakase menu represents excellent value compared to premium dining elsewhere in Brighton and Sussex.

A taste of Japan

For those who have explored Japan's diverse food culture – from izakaya pubs to department store food halls and neighbourhood kaitenzushi restaurants – Fumi successfully captures something of that authentic experience. The menu moves beyond the predictable, offering dishes that would genuinely feel at home in Japan itself.

Whether you're a longtime enthusiast of Japanese cuisine or newer to exploring its flavours, Fumi offers something worth discovering. The restaurant represents the kind of culinary ambition that enriches Brighton's already vibrant food scene.
