French-style Champagne and Fromage bistro set to open in The Lanes
Londondoner Champagne and Fromage has applied for planning permission to open a new French-style bistro at the former Vurger Company site in Brighton Place.
Exciting news for food and drink lovers across Brighton and Hove: a new French-style bistro is on its way to The Lanes. Champagne and Fromage has applied for planning permission to set up shop at 13 Brighton Place, taking over the space left by the Vurger Company's closure earlier this year.
A taste of French hospitality
Founded by Stefano Frigerio and Maud Fierobe, Champagne and Fromage brings a distinctly Gallic flavour to the UK dining scene. The couple's passion for quality extends beyond the restaurant itself – they also import Champagne from small vineyards through their company, Dosage, ensuring diners have access to exceptional bubbly alongside expertly curated bistro fare.
Expanding across the UK
This will be the seventh location for the thriving restaurant chain. Currently, Champagne and Fromage operates three restaurants in London, with additional sites in Chester, Harrogate and Bath. The Brighton opening marks another significant expansion for the successful business, bringing its distinctive charm to our vibrant coastal community.
Making its mark on The Lanes
As part of the planning application, the team has submitted proposals for a range of new signage at the site. The plans include an externally lit fascia sign, two non-lit external signs, a projecting sign and a window-mounted sign. Existing sign boards will be given a fresh look, painted in the elegant Farrow and Ball studio green – a nod to classic French design sensibilities.

This arrival follows the closure of the Vurger Company's Brighton branch in February 2024, one of four locations that shut down at that time. It's heartening to see a new venture bringing fresh energy to The Lanes, one of our city's most beloved neighbourhoods.
